Santi Proemio Amarone Della Valpolicella Classico DOCG

Description

Dark red colour, ruby red reflections. The bouquet is very enveloping in complexity, smoothness, and intensity. A texture given by the hints of ripe plum, blackcurrant jam, and blueberry. Followed by notes reminiscent of orange peel, tea leaf, and dry pastry.
On the palate it is enveloping, round yet vibrant due to the velvety tannins and the pleasant acidity. The return of the scents on the nose accompanies the long and sapid aftertaste.

Grape

:

Corvina, Corvinone, Rondinella.

Production Method

:

At the end of January, after the pressing, a long and slow alcoholic
fermentation takes place, which lasts over 50 days, at a maximum
temperature of 20°C, with only native yeasts, in wooden vats with an
average capacity of 25 hl.

Santi Valpolicella Le Caleselle DOC

Description

Very deep ruby hue, accompanied by a penetrating, sophisticated, fruity nose with pervasive notes of ripe cherries, red currants, and violets, and a long, dry, mellow palate with good structure and balance.

Grape

:

Corvina & Rondinella.

Production Method

:

The very ripe grapes are fermented whole bunch to obtain more aromatic intensity both on the nose and on the palate, with soft and silky tannins.
The maceration lasts for around 15 days, at controlled temperatures with several pumping-over phases determined by the various structural and aromatic components. Fermentation takes place at controlled temperatures (20˗24 °C).

Taste

Santi Valpolicella Ripasso Solane DOC

Description

Very terroir-true, forthright wine with great character. It has an attractive deep, bright ruby hue and a clean, complex, typical nose with concentrated notes of fresh berry fruit and morello cherry jam, swathed in vanilla. On the palate it is warm, direct, and balanced, with an elegant spicy finish offering notes of toast. It has a strong personality, thanks to its exceptionally elegant, sophisticated nose and its long, lingering, full-flavoured palate. An excellent early drinker, it only improves with time.

Production Method

:

The grapes from the different plots are fermented separately on the skins, with a maceration period of 15 days and pumping over at carefully controlled temperatures in the attempt to achieve distinctive wines, enhancing the unique characteristics of the
fruit and its terroir. Valpolicella waits until January for the production of Santi’s Amarones in order to undergo the “ripasso” process with the pomace, which gives
them power and personality.

Santi Sortesele Pinot Grigio DOC

Description

Straw yellow hue, accompanied by a close-focused nose of pear, apricot and white flowers. The fruity palate, with top notes of stone fruit, shows ripeness and roundness well supported by an elegant acidity and savouriness, ensuring a long, lingering finish.

Food Pairing

:

Traditional Veneto dishes: radicchio and Asiago or Monte Veronese cheese
roulades, eggs and asparagus.
In general: risottos, grilled fish, white meats, herb frittatas.
